Chicken Afritada
This is a common recipe in our country which I believe originated from Spain and was then localized in a sense that there came lots of variations in regards to this recipe. Anyway, what I will be cooking is what was handed down to me by of course my foster mother.

- Half Kilo Chicken
- Two pieces Potato, quartered
- One piece carrots, sliced
- One Piece red pepper, sliced
- Three cloves of garlic, (minced or chopped)
- One piece sliced onion
- Tomato sauce
- Salt and pepper to taste
- Cooking oil of your choice
- Heat the oil and saute the onions and garlic
- Add the chicken and semi fry until some part parts of the chicken turns golden brown.
- Add the tomato sauce with one cup of water.
- Allow to boil then add the potato and carrots
- Simmer until the potato and carrots are cooked
- Add the Red Pepper
- Cook for about 3 minutes
- Serve hot with rice.
